Hearts of palm is a vegetable harvested from the core of certain types of palm trees. Also known as ‘palmito’, they have a fresh, piquant taste (almost like a cross between an artichoke and a water chestnut) and make a crisp, crunchy addition to cold pasta salads and mixed green salads.
