San Marzano DOP Tomato Soup

Ingredients

Serves 4
3 Tbsp butter
1 white onion, chopped
1 ½ cup vegetable or chicken stock
1 796 ml can Pastene San Marzano DOP Tomatoes
1 tsp salt

Directions

Prep time: 5 minutes | Cook time: 30-40 minutes

  • In a large saucepan, melt butter on medium heat.
  • Add onions, stock, tomatoes with juices, and salt. 
  • Simmer and cook, untouched, for 30 to 40 minutes.
  • Puree the soup with an a blender. 
  • Serve with fresh basil and croutons, if desired.
